Food safety training requirements

What you need to do

The top priority for food businesses is to make sure the kai is safe, suitable and the right processes are followed.

All food business operators or managers need to ensure all staff are trained in food safety.

All staff should know:

  • what to do
  • why they do it
  • how their decisions and actions impact on food safety and suitability.

You will need to complete and sign a staff training record for each person who works in the business - including managers. This will be checked at your verification.

Training requirements are outlined in the Template Food Control Plan and National Programme Guidance documents.

Food safety courses for your staff

You can send your staff for a formal food safety training course.

There are a number of private providers of basic food hygiene training courses.

Visit the NZQA website for details.
